Broccoli cheese soup is great for cold, rainy days as well as for an easy inexpensive meal. This recipe is also good those looking for a healthier meal for their kids, without all the chemical additives put in the canned soups.
What you need:
6 cups of broccoli florets
1 small onion
2 cups of water
3 tablespoons of butter
3 tablespoons of flour
2 1/3 cups of milk
1 lb. processed cheese, cubed
sauce pan
pot for boiling
-Dice up your onion as well l as t your broccoli into florets if they aren’t already
-Place broccoli and onion in a pot with water and bring to a boil
-Once boiling, reduce heat, cover and simmer for 12-13 minutes
-Now take your sauce pan and melt the butter in it.
-Then stir in the flour and milk slowly. Stir for about 2 minutes so that i t can thicken
-Then stir in the cheese until it is all melted
-Drain the vegetables, add them to the sauce until all is completely mixed.
