Learning how to freeze corn on the cob will allow you to enjoy succulent, freshly picked corn throughout the cold months. This corn will taste leaps and bounds better than the corn you acquire at the grocery that’s been frozen for ages. There are a few simple steps to freeze corn on the cob and preserve that sweet corn taste, throughout the winter.

Buy your corn and husk it. This seems simple enough. Remove all remaining strands and threads. To preserve the sweetness of the corn on the cob, prepare a large pot of boiling water and drop your corn inside to boil for 5 minutes. This will kill enzymes that destroy the freshness and flavor of the corn. Note that this step isn’t crucial but does help if you plan to freeze the corn for extended amounts of time (over a month).

Remove the corn from the boiling pot and shake dry. Remove as much water as possible from the corn on the cob and prepare to freeze that corn! Removing water is very important to keep your corn fresh. Now you want a sharp knife, run it down the side, removing the corn in “strips” until all you’ve got left are the bare remnants of the corn on the cob.

Repeat this for all of your husks. Don’t worry that it’s not broken up into kernels, that will happen naturally when you remove it. Ideally a vacuum sealed bag is best to freeze corn on the cob in. To freeze corn on the cob, place the strips of corn inside a ziploc bag and remove as much air and water as possible. This will prevent the corn from drying up while sitting in your freezer.
